I don’t care how snobby this sounds but microwaved bacon is a tragedy. I’ll never discuss politics on this site, but I have to voice my opinion on matters of bacon. Yet I understand why people do it – less mess, hands-free cooking to name a few. Oven cooked bacon is great for those same reasons! It is also a breeze for a crowd and allows you to prepare other breakfast or brunch dishes while it cooks. I cook this bacon in the oven with my Citrus French Toast so it generally takes about 30-35 minutes. If you cook it in the oven alone it will take closer to 20 minutes. Bacon that is not thick cut will only need around 15 minutes.
I prefer the chew of thick cut bacon and find that it cooks more evenly than thinly sliced bacon.
Oven Roasted Bacon
serves 4 to 8
1 pound bacon, preferably thick cut
Preheat oven to 375 F. Place a cooling rack on top of a rimmed baking or half sheet pan (they will fit snuggly).
Lay bacon on the cooling rack in a single layer, making sure the slices do not overlap (it is OK if they touch, though). Roast until bacon is golden and crispy, about 15 to 25 minutes.
