When it comes to mashed potatoes I prefer them a little lumpy and just mixed. The same goes for this sweet potato mash. Beginning with Roasted Sweet Potatoes, I mix them briefly in a stand mixer fitted with a paddle attachment (you could use a potato masher instead but the mixer makes it easier on your arms). I skip the cream because these potatoes are perfect with a little butter and maple syrup. No whipping in this recipe! Mix until the butter and syrup are just incorporated.
Brown Butter Sweet Potato Mash

Ingredients
1 batch Roasted Sweet Potatoes
4 tablespoons unsalted butter
3 tablespoons maple syrup
1 teaspoon fresh thyme leaves, divided
Kosher salt
Scoop the flesh of Roasted Sweet Potatoes into a large bowl. Using a stand or electric hand mixer, mix the potatoes on low speed until well mashed, about 30 seconds.
In a small saucepan, heat butter over medium low until it foams and begins to turn brown, about 5 to 6 minutes. Immediately add brown butter to sweet potatoes along with maple syrup, half the thyme and 1/2 teaspoon salt. Mix on low speed for another 30 seconds. Taste for seasoning and adjust as you see fit. Transfer to a serving bowl and garnish with remaining thyme.
