Here is a recipe for the easiest pasta that pays tribute to summer-fresh tomatoes! And while I love a good bowl of pasta with a long-simmered tomato sauce, sometimes you don’t want to spend all day in the kitchen. The only cooking this simple dish requires is a pot of boiling water. The cooked pasta is then tossed with my favorite tomato salad and a little olive oil. And that’s it! It’s perfect for entertaining al fresco and delicious hot or at room temperature. You could add some grated Parmigiano-Reggiano or cubed fresh mozzarella, but I enjoy the simplicity of just pasta and garden tomatoes. Use the best quality extra virgin olive oil you can find.
Pasta with Raw Tomato Sauce
serves 4
Ingredients
Kosher salt
1 pound spaghetti
1 batch Simple Tomato Salad
2 tablespoons extra virgin olive oil, plus extra for drizzling
Freshly ground black pepper
Fresh basil leaves, for garnish
Heat a large pot of heavily salted water over high heat until boiling. Cook pasta according to package directions (I like to cook it until al dente). Drain well. Return pasta to pot and toss with Simple Tomato Salad and the 2 tablespoons olive oil. Taste for seasoning and adjust as necessary. Transfer to a large serving bowl, drizzle with additional olive oil, if desire, and garnish with additional basil (or just serve it straight from the pot!).
