Sweet yet earthy in taste, these versatile roasted sweet potatoes are an essential for your cold weather kitchen repertoire. Delicious plain or dressed with a little butter and maple syrup, you can treat the roasted orange flesh as you would pumpkin purée. Mix roasted sweet potatoes into cooked oatmeal, serve them with milk and butter for a savory mash or use to make a decadent pudding.
A layer of aluminum foil or parchment paper helps to keep the baking sheet free of any juices that seep out (and quickly burn!) of the potatoes while roasting.
Roasted Sweet Potatoes
3 pounds sweet potatoes, scrubbed
Preheat oven to 400 F. Line a rimmed baking or half sheet pan with aluminum foil or parchment paper.
Prick each potato in several places with a fork. Place potatoes on prepared baking sheet and roast until roast very tender when pierced with a paring knife, about 60 to 75 minutes.
Allow potatoes to cool then cut in half lengthwise.
