I am not a big dessert person, especially in the summer, but when the weather is warm ripe fruit is the best way to end a meal. The whipped cream is without sugar so the flavor doesn’t compete with the ripe nectarines and sweet compote. To make whipped cream in advance, beat the cream almost to soft peaks. Cover with plastic wrap and chill in the refrigerator. Just before serving, remove plastic wrap and beat cream to soft peaks.
Ripe Nectarines with Raspberry Compote
serves 4
Ingredients
1 cup heavy cream, cold
2 large or 4 small ripe nectarines, cut into wedges
1 batch Raspberry Compote, cold or at room temperature
Beat cream with a whisk or electric mixer until soft peaks form. Divide nectarine wedges over four dessert plates or bowls. Top nectarines with Raspberry Compote and whipped cream.
