Here’s a twist on a tomato, mozzarella and basil salad. This platter is great for entertaining because it easily doubles or triples and is perfect when served at room temperature.
1 baguette, about 12 inches
3 tablespoons extra virgin olive oil
8 ounces fresh mozzarella, at room temperature
1 batch Simple Tomato Salad
Preheat a gas grill or grill pan over high heat.
Cut baguette in half lengthwise, then cut each half into 4 equal pieces. You will have 8 pieces. Drizzle cut sides of bread slices with 1 to 2 tablespoons olive oil. You want to lightly coat the bread in oil but not drench it. Grill bread, cut side down, until nicely toasted with grill marks, about 2 to 3 minutes depending on your heat.
Arrange grilled bread, fresh mozzarella and Simple Tomato Salad on a platter. Drizzle mozzarella with remaining tablespoon of olive oil.
