This salad is one of the easiest dishes you can make all summer. No cooking is required. It’s delicious on its own but if you’d like to dress it up for entertaining add a platter of grilled baguette slices and some fresh mozzarella with a drizzle of balsamic vinegar.
Simple Tomato Salad
makes about 6 cups
Ingredients
2 pounds tomatoes, cut into 1-inch pieces
1 small clove garlic, finely chopped
2 tablespoons extra virgin olive oil
Kosher salt
Freshly ground black pepper
1/4 cup packed basil leaves, torn, plus more for garnish
Combine tomatoes, garlic and olive oil in a large bowl. Season very well with salt and pepper. The salt is what’s going to bring out the flavor of the tomatoes. Let salad sit for 10 minutes to allow the flavors to blend. Add the basil leaves, toss, taste for seasoning as you see fit and serve.
