1 tablespoon extra virgin olive oil, plus extra for pan
2 pounds sausages
1 pound string beans, trimmed
Freshly ground black pepper
Zest of 1 lemon
Preheat oven to 425 F.
Rub a rimmed half sheet pan with 1 teaspoon olive oil. Place sausages on pan and roast for 15 minutes.
Toss beans with the tablespoon of olive oil and season well with salt and pepper.
Remove sheet pan from oven and flip sausages over using tongs. Scatter the seasoned beans around the sausages. Roast for 10 to 15 minutes until sausages are golden and cooked through and beans are tender.
Top beans with lemon zest and serve.
